Chocolate mousse is a dessert whose traditional composition includes at least chocolate and egg white, whipped into snow. It can sometimes be embellished with egg yolk, sugar or whipped cream, spices or citrus zest. Chocolate mousse was described in 1755 by Menon under the name “Chocolate mousse” 1, a term which also applied to the foam on the chocolate drink. In 1820, Viard gave a recipe in Cuisinier royal2,3. But it was created by Charles Fazi (Switzerland), servant of Louis XVI.There are many recipes for chocolate mousse whose composition can vary, this one is easy and exceptional:

 

Ingredients:

 

  • 150 g of dark chocolate rich in cocoa
  • 50 g of chocolate chips
  • 4 egg whites
  • 1 sachet of vanilla sugar
  • 1 pinch of salt

 

Preparation of the recipe

 

  1. Break the chocolate into small pieces. Melt it in a bain-marie over low heat or in the microwave at medium power. Smooth it.
  2. Beat the egg whites until stiff with one pinch of salt. Add the vanilla sugar while continuing to beat them.
  3. Incorporate the chocolate into the egg whites, spoonful by spoonful and gently lifting the whole with a flexible spatula.
  4. Then stir in the chocolate chips. Divide the mousse into 4 cups. Keep fresh until ready to serve.
